I am so happy I came across @danishealthyeats Sweet Potato Cinnamon Rolls that are made with good-for-you ingredients and won’t blow out your gut.

I know you’re going to want to make these so here is the recipe:

2 cups mashed white sweet potatoes (about 2 medium potatoes)

⅔ cup cassava flour

2 tbsp monk fruit sweetener or coconut sugar

1.2 tsp vanilla

Filling:

5 tbsp melted coconut or avocado oil

¼ cup + 1 tbsp coconut sugar

1.5 tbsp cinnamon

Add to a pot of boiling water & cook until super tender. Drain & place in a food processor. Process until they’ve broken down, then add the remaining ingredients. Spread dough onto parchment paper & roll into a rectangle. Mix together the filling ingredients & spread over the dough. Use the paper to help roll the dough into a log & cut it into slices. Spray a muffin tin & place a piece in each crevice. Bake at 375f for 18-22 mins until slightly golden & firm to touch.
