Pumpkin pancakes are such a comforting and delicious breakfast, perfect for a cozy Fall morning. This recipe from @sunnysrecipes has become one of my favorites because it’s filled with simple ingredients.
Here’s what you’ll need:
½ cup of oats - if you are someone who can tolerate oats then go for it! If not feel free to use almond flour instead.
¼ cup pumpkin puree - always make sure you’re using 100% pure pumpkin and not a canned pumpkin pie mix! Pumpkin pie mix has almost 3 times the amount of sugar and double the calories as 100% pure pumpkin
1 tbsp maple syrup - make sure you’re using pure maple syrup which has more antioxidants
½ tsp baking powder
½ cup nut milk - I recommend macadamia or unsweetened almond milk!
All you have to do is mix all the ingredients together, pour onto a pan on the stovetop, flip and enjoy!
