pumpkin french toast: onions

1 cup warm water

1/2 cup vinegar (I used ACV)

1 1/2 ts salt

1 tbsp coconut sugar

1 red onion

Mix everything but the onion until sugar dissolves. Pour in a mason jar with the onion and leave overnight in the fridge

Healthy Green Enchiladas

- 1/2 lb chicken breast

- 1 package grain free tortillas

- smoked paprika and cumin to taste

- 1 jar siete green sauce

- 2 peppers cut up

- vegan cheese if desired

- top with pickled onions, avocado and cilantro

bake 350F for 25 mins
